 Pumpkin Caramelised Walnut Salad Recipe

Pumpkin Caramelised Walnut Salad Ingredients:
  • 1 cup walnuts (toasted)
    2 tablespoons sugar
  • 3 cups baby cos leaves
  • 1/2 pumpkin
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • salt and pepper

Pumpkin Caramelised Walnut Salad
Time: 1 hour
Serves: 4

Pumpkin Caramelised Walnut Salad Instructions:

  • Wash outside of pumpkin well, de-seed and slice in moon shaped wedges roughly 5 cms long.

    Coat each piece in olive oil – season well and place on baking tray in oven for 30 minutes on 180°C or until cooked. Remove from oven and cool.

    Over medium heat, warm the walnuts with the sugar until the sugar melts and coats the nuts. Cool.

    Meanwhile make a dressing with the olive oil and vinegar and seasoning. In a large mixing bowl add the pumpkin pieces mixing carefully together with the cos, the walnuts and dressing.

Pumpkin Caramelised Walnut Salad Cooking Time:
  • Cooking time 30 minutes.
  • Allow to cool a little before serving.

  • Serve as a starter.
