| Christmas Muffins Recipe | Christmas Muffins Ingredients:- 1 cup dried fruit medley
- 1/2 cup prunes, chopped
- Brandy to soak fruits
- 1 3/4 cups sugar
- 2 cups plain wholemeal flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 cup desiccated coconut
- 2 cups grated carrot
- 1 cup grated apple
- 1 cup slivered almonds, chopped
- 3 eggs, beaten
- 1 cup olive oil
- 1 teaspoon vanilla essence
- icing sugar for dusting

| Christmas Muffins Instructions:Pre-heat oven to 190C
Put the dried fruits into a jug and cover with the brandy (you might like to leave overnight if you like your fruit extra brandied!!)
Sift dry ingredients (except the coconut) into a large bowl.
Drain the fruits and reserve the brandy. Toss the dried brandied fruits in the dry ingredients until well coated. Add the coconut, carrot, apple and nuts and stir well. Add the eggs, oil, vanilla and reserved brandy and stir until combined.
Spoon into deep muffin pans and bake for 20 minutes.
Serve dusted with icing sugar.
| Christmas Muffins Cooking Time:- Cooking time 20 minutes.
- Allow to cool before serving.
- Store in an airtight container.
