 Cottage Cheese Cookies Recipe

Cottage Cheese Cookies Ingredients:
  • 9 tablespoons butter, softened
  • 1 1/2 cups sugar
  • 2 eggs, lightly beaten
  • 2 1/2 tablespoons fresh lemon juice
  • 2 teaspoons grated lemon peel
  • 1 cup cottage cheese
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt 5

Cottage Cheese Cookies Instructions:

  • Using an electric mixer, cream the butter with the sugar until fluffy. Beat in the eggs, lemon juice and lemon peel. Press the cottage cheese through a sieve and add it to the batter, beating well. Sift the dry ingredients together, add them to the batter and mix thoroughly.

    Drop the batter by the teaspoonful onto buttered baking sheets - spacing the mounds well apart.

    Bake in a preheated 400 F. (200 C.) oven for about 15 minutes, or until the cookies are lightly browned.

  • Cooking time 15 minutes.
  • leave to cool before serving.
  • Store in an airtight container.
