Italian Ingredients:
  • 1 Free-Range Chicken
  • 8.5oz Onion
  • 3 Cloves Garlic
  • 5.5oz Tomato Paste
  • Glass Red Dry Wine
  • 5 tablespoons Extra Virgin Olive Oil
  • 1 Red Hot Pepper
  • 1 Leaf Laurel
  • Fresh Italian Parsley & Rosemary
  • Salt

Serves: 6

Italian Instructions:
  • Wash chicken in cold water and chop in pieces.
  • Now add chicken, onion and garlic to a medium size pan with parsley, rosemary and the leaf of laurel.
  • Combine all the ingredients so that they do not stick to the pan.
  • Start to brown once browned, add wine and after 5 minutes then add the tomato paste with a little hot water.
  •  Now add the red crushed pepper and cook until the chicken is tender
  •  Allow the sauce to steam so it is quite condensed.
Italian Cooking Time:
  • Cooking time will vary depending on the size of the bird
Italian Serving Instructions:
  • Serve with your choice of vegetables.
  • Great for a Holiday Meal.
