 Chocolate Cheesecake Recipe

Chocolate Cheesecake Ingredients:
  • Crust
  • Non-stick Cooking Spray
  • 1 and a 1/3 cups Crushed Chocolate
  • 30 wafer cookies
  • 2 tablespoons Sugar
  • Pinch of Salt
  • 5 tablespoons Unsalted Butter, Melted
     
  • Filling
  • 7 ounces Bittersweet Chocolate, chopped finely
  • Three 8-ounce packages Cream Cheese, softened
  • 3/4 cup sugar
  • 4 large Eggs
  • 2 teaspoons pure Vanilla Essence

Chocolate Cheesecake Instructions:
  • Preheat oven to 350 F .
  • Spray the cooking spray on the inside of a 9-inch pan.
  • Crush cookies, sugar, and salt in a food processor and grind into fine crumbs.
  • Add the melted butter and blend until the crumbs are moistened.
  • Put the crumb mixture into the pan and press down evenly around the bottom and about 3 cm up the sides of the pan,
  • Make sure that you pack it down tightly with your fingertips and leave to stand.
  • Put 2 inches of water in a saucepan and bring to a light simmer.
  • Place the chocolate in a stainless-steel or glass bowl big enough that will rest on the side of the saucepan.
  • Put the bowl above the simmering water in the saucepan and use the steam to melt the chocolate.
  • Do not let the bottom of the bowl touch the water.
  • Heat lightly and whisk occasionally, until the chocolate is completely melted and leave to cool.
  • Mix the softened cream cheese and sugar in a big mixing bowl.
  • Use a electric mixer on high speed until very smooth.
  • Add the eggs, one by one and mix on low speed until combined and then scraping down the sides of the bowl.
  • Stir in the melted chocolate and vanilla.
  • Place the prepared pan on a baking sheet and pour in the filling.
  • Cook the cheesecake until the perimeter is set but the center is still a little soft about 55 minutes.
  • When you remove the cheesecake from the oven, run a sharp knife around the edges of the pan.
  • Put the cheesecake on a wire rack and let it cool down completely.
  • Cover it in plastic, and refrigerate it for at least 6 hours or overnight.
Chocolate Cheesecake Cooking Time:
  • Cook Time 55 min.
  • Refrigerate 6 or more hours.
Chocolate Cheesecake Serving Instructions:
  • Serve with Whipped Cream, Ice Cream, or Custard if required.
