Peppermint Cheesecake Recipe |
Peppermint Cheesecake Ingredients:- 150g/6oz Digestive Biscuits
- 225g/8oz Cottage Cheese softened
- C. Sugar
- 3 Eggs
- ¾ tablespoon Vanilla
- 1 tablespoon Peppermint Extract
- 2 drops Green food colouring
- 1 pint Sour Cream
- 3 tablespoons Sugar
- 1/2 tablespoon Vanilla
|  Time: 50 min Serves: 10 - 12

Peppermint Cheesecake Instructions:- Crush digestive biscuits to make 2 cups of fine crumbs.
- Press evenly into the bottom and sides of a 10-in. springform pan.
- Whip the cream cheese in a mixing bowl; slowly add sugar.
- Now add eggs one at a time and stir in vanilla, peppermint extract, green food colouring.
- Pour mixture into crust and bake 40 min. at 350º F.
- Whip sour cream; add sugar and vanilla. Spread on top of cheesecake and put back into oven.
- Cook for 10 more min and then leave to cool before removing sides from springform pan.
- Refrigerate for 6 hours at least.
