 Peppermint Cheesecake Recipe

Peppermint Cheesecake Ingredients:
  • 150g/6oz Digestive Biscuits
  • 225g/8oz Cottage Cheese softened
  • C. Sugar
  • 3 Eggs
  • ¾ tablespoon Vanilla
  • 1 tablespoon Peppermint Extract
  • 2 drops Green food colouring
  • 1 pint Sour Cream
  • 3 tablespoons  Sugar
  • 1/2 tablespoon Vanilla

Peppermint Cheesecake Instructions:
  • Crush digestive biscuits to make 2 cups of fine crumbs.
  • Press evenly into the bottom and sides of a 10-in.  springform pan.
  •  Whip the cream cheese in a mixing bowl; slowly add sugar.
  • Now add eggs one at a time and stir in vanilla, peppermint extract, green food colouring.
  • Pour mixture into crust and bake 40 min. at 350º F.
  •  Whip sour cream; add sugar and vanilla. Spread on top of cheesecake and put back into oven.
  • Cook for 10 more min and then leave to cool before removing sides from springform pan.
  • Refrigerate for 6 hours at least.
Peppermint Cheesecake Cooking Time:
  • Cooking time 50 min.
  • Refrigerate for 6 hours at least.
Peppermint Cheesecake Serving Instructions:
  • Serve with Cream or Ice Cream if required.
